Roasted tomato soup, with thrown in peppers that had to be used. Very yum with my ufo herby bread (unidentified flat object) Should have been a cottage loaf, I got a flat loaf, very yummy regardless. Cake v good too.

roasted tom soup
Ingredients
For the roasted tomatoes
6 tomatoes on the vine, halved widthways( or about 500gs of cherry tomatoes)
4 tbsp olive oil
4 sprigs fresh thyme or dried a bit less of

For the soup
4 tbsp olive oil
1 onion, roughly chopped ( I used 2)
3 garlic cloves, roughly chopped( used 4)
2 long red chillies, finely sliced ( i used normal peppers which had to be eatena nd added a bit of harisa paste)

1 tbsp tomato purée
2kg/4lb 4oz ripe, mixed tomatoes, roughly chopped
handful fresh coriander leaves, roughly chopped
1 litre/1¾ pints chicken or vegetable stock - I used little less.
2-3 tbsp caster sugar

Can use, I didn't this time, for show or for mixing in.
75ml/3fl oz double cream

4 tbsp crème fraîche.

squiggle of olive oil,

Preparation method
1.For the roasted tomatoes preheat the oven to 150C/300F/Gas 1.~2.Place the tomatoes,(plus peppers and onion), cut-side up, onto a roasting tray and drizzle with the olive oil. Season with salt and freshly ground black pepper then scatter the thyme on top.

3.Roast in the oven for 4-6 hours, or until slightly dried out. or 45 minutees which I did

4.Turn the oven off and allow to cool, preferably overnight, in the oven.

5.For the soup, heat the olive oil in a frying pan until hot and fry the onions for 2-3 minutes, or until just softened.

6.Add the garlic, chillies, tomato paste and tomatoes and fry for another 2-3 minutes. ( isued about 1 tbs of harisa paste)

7.Add three-quarters of the coriander and the stock, bring to the boil then reduce the heat and simmer for 3-4 minutes. Blend in a blender to a purée.

8.Return the soup to the pan and season, to taste, with salt, freshly ground black pepper and sugar. Stir in the cream and simmer for one minute.

9.To serve, ladle the soup into serving bowls. Top with some roasted tomatoes and a spoonful of crème fraîche; drizzle with olive oil and sprinkle over the coriander.

My variantion, I added normal bell peppers, onions quatred and garlic and roasted them for 45 minutes on
about 180C) - my oven runs hot so go by sight, it should looked roasted and juicy not dried out.
